Egg Breakfast "Pizza" in less than 10 minutes (GF/DF/low FODMAP)

Although I don't claim to be a pro in the kitchen, I do enjoy creating simple, healthy recipes that are tasty & easy for those on the go! This recipe is also great for anyone looking to cut out gluten and dairy -- or like me-- managing their IBS symptoms via the FODMAP diet. 

Even with simple ingredients, and GF products, this little creation is delicious, and you can make it in less than 10 minutes (I make it while I'm getting ready in the morning)!

INGREDIENTS:

  • Food Life "Brown Rice Tortillas" from Whole Foods (or other GF wrap with minimal ingredients) 

  • 2 Eggs

  • 1/2 cup egg whites

  • 1/4 cup avocado

  • Salt to taste

  • Toppings of your choice (recommend extra avocado or salsa!)

STEP 1:

Spray & heat your smallest pan over med high. 

>> Crack 2 eggs & pour 1/2 cup egg whites into pan (don't mix!) - allowing to cook through (like a pancake) for approx. 5 minutes until ready to flip. <<

Flip egg "pancake," salting both sides as you go.

STEP 2:

Once your egg pancake is almost finished cooking, fold GF tortilla into 4 pieces, put all pieces together in one side of toaster and toast @ med high setting - or until pieces are crisp/ hard

STEP 3:

Add a base of avocado to each tortilla piece 

>> cut egg pancake into 4 pieces - one to top each tortilla piece << 

STEP 4:

Ready to eat! Also great with salsa (or cheese if you're not avoiding dairy!).

TOTAL CALS: 415 calories (as is), higher if extra toppings added
