Zucchini Fritters (GF / VEG / FODMAP free )

I've been getting creative in the kitchen lately, as part of my attempts to make eating vegetables more ENJOYABLE. I'm also on the "FODMAP" diet (a specific plan for people with IBS) which really limits the types of food I can eat, and makes it crucial to experiment!

But whether or not you're on a specific eating plan- these zucchini fritters are a great way to get in your veggies & are super light, delicious & easy to make! 

-Zucchini Fritters Recipe-

INGREDIENTS

-1-2 large zucchini 

-3 tablespoons green onions (chives)

- 3 eggs

- 3 tablespoons coconut flour (or GF flour)

- 1 tablespoon parmesan

-2 tablespoons oil (any kind)

- Salt & parsley

PREP: 5-10 mins

COOK: 12 mins

MAKES: 8-10 fritters

STEP 1: Grate 1-2 zucchini (I did 200 grams) & squeeze in paper towels to get out excess moisture

STEP 2: Mix zucc, eggs, chives, coconut flour, parmesan and seasonings in mixing bowl

STEP 3: Heat 2 tablespoons oil in nonstick pan

STEP 4: Ball up mixture into 1.25" rounds and cook 4-5 at a time

STEP 5: Cover, cook one side for 3 mins over medium heat, flip, cover & cook other side for 3 mins

Step 6: Make 4-5 more fritters from remaining mixture (no more oil necessary) 

Step 7: Add any toppings you'd like! (I just topped with more parm - as it already has a great natural taste)
