Lately I’ve been on a mission to make vegetables more appetizing and delicious—and have been discovering some incredible new recipes along the way!
My current obsession is the following “spinach chip” recipe—which is 1000 x easier to make than kale chips, requires less ingredients and (in my opinion) results in much tastier chips!
1.5 cups spinach olive oil
salt + pepper
optional: parmesan, garlic, additional herbs
Step 1: Preheat oven to 390 degrees
Step 2: Toss spinach leaves with 1 TBS olive oil, salt and pepper in a bowl (or you can omit the oil for lower cals)
Step 3: Spray pizza pan* with cooking spray (or oil) and line with spinach + any additional toppings
*(scroll down for alternative cooking instructions if you don't have a pizza pan)
Step 4: Cook @ 390 degrees for 13 minutes (time may vary by oven, so check on them every 5 mins!)
*Instead of pizza pan, try lining a baking sheet with parchment paper and cooking at 250 degrees for 20-30 minutes (checking on them after the 15 minute mark to ensure you’re not overcooking).
